What is the best way to remove old pages (if at all)?
Do all of the pages receive back links? It would be a laborious job and perhaps not worthwhile but you could look at which of the pages receive a substantial amount of links or links from high quality websites. Then just include the "Good" pages in your new site. Like you say, I think you would benefit from losing some low value content that doesn't rank well and doesn't have many quality links pointing to it. Whatever you decide it would be interesting to know how that effects your site. Perhaps even worthy of a YOUmoz post?!

I would highly recommend getting an individual to do it on elance. You can look at their ratings from previous projects and how much money they have made from this line of work. This way you can be sure that you are getting a proper writer to do this work. Additionally I would say - good job on the rewriting - this is necessary!

Local SEO: By city, by multiple cities, or by region?

How do you get reviews from a local review site to show up in Places?
It is an automated process. Google uses rich snippets to collect this data. The review site need to use rich snippets to transfer. If you are looking for sites to get reviews on, check your competitors and see where their reviews are coming from. Encourage your customers to use the same review sites. Also, give your customers options on where to review you. If someone already is active in Google reviews it doesnt make sense for them to review you in Yelp, especially since yelp will probably filter their result if they sign up for an account to write one review and never come back. If it is your review site, there is a submission process. When the keyword rankings trend south…?
Normal. Don't be surprised if you are 15 tomorrow and in the 60's next week. Think of your rankings as being like the weather. Right now the trend is weather getting warmer, but some days it will be really hot and some days it will storm and get cold. Overall these are just flukes in the general pattern. Your rankings will do the same types of fluctuations. Only get concerned if your rankings drop and they stay there for over a month.

Naming Pictures
I like to name at least one of the pictures with the exact keyword I'm targeting in the title tag: greatest-home-example-ever.jpg and then the alt attribute would be "greatest home example ever". Then, for other images on the page, use similar, but varied file names and anchor text, such as: great-home-example.jpg, greatest-home-example.jpg, etc. I have no idea if this helps rankings or not, but I also like to optimize the meta data in the image. I figure it might help, so why not! If you're using Windows, you can right click on the image, choose properties, click the details tab. Put the keyword in the title, subject, and comments. I'm sure you can do it on a Mac as well, probably just as easily.

When to SEO optimize a blog post?
Hey Jon, I agree with both David and Kayden--readability, emotional impact, and great content should take priority over the mechanical SEO-rewriting. IMO, the best option here is to teach your copywriter the basics of writing with SEO considerations. Investing that time up front will save you the pain in the long-run of "re-cooking" his content. One suggestion would be to develop a checklist, or a system of some sort that helps your writer incorporate SEO best practices while writing the posts (think: synonyms for latent semantic indexing, rich anchor text, proper use of headings, etc.) Teach a man to fish...

Where is Google pulling the date stamp information from?
This would be really hard to pinpoint without seeing the page. As it all depends on what's on your page. For example, if it's a blog post that you just wrote, but put the timestamp at last year by accident, google will see that in the code and use that. Another example could be that somewhere in the text you've written "in december 2009 SEO was a lot different" it could incorrectly pick that up and place it within other snippets.

Google Maps Service Areas
Greetings, Pablo, You are allowed to have one Place Page for each city in which you have a unique physical address and unique local area code phone number. Some people do choose to list a few service area cities by name in the Additional Details section of the Place Page, but don't go overboard with this. There is no 'legal' limit, set by Google, but there is some thought that if you do too much of this, it can result in a drop in your rank. I would advise you to remember that it is your website, and not your Place Page, that has the greatest impact on rank. Because of this, I would keep the Place Page simple, and use the pages of your website for optimizing for multiple cities in which you serve.
