Will hosted videos be indexed and pulled into search results if a video sitemap is submitted, but the video itself is in an iframe?
First thing's first; I found that only Google will validate extended sitemaps. Yahoo/Bing states in SE/WMT that they will parse the valid information in the sitemap regardless, but I'm not perfectly clear on this. You can search within sitemap category on the search engine pages. Remember now that the src attribute is not a link, so if this is how you are adding multimedia to your pages, I'm not sure how you will include them in your sitemap. There are many discussions about iframes passing page rank, and the consensus is that they currently do not. If this is the way it has to be for this project, then of course you should add alternate text for iframe and frameset elements, add a title, and maybe include a link inside the iframe. Really, what else can you do? But some good news can be found here http://www.stonetemple.com/articles/interview-matt-cutts-012510.shtml. It's possible Google may change the way pageRank flows through these kinds of links.

Google indexing flash content
I haven't seen or heard anything about Panda making any changes to how Flash is crawled or indexed. It would count towards page content though yeah, just not in the sense of that page content in a normal way. Videos, images, everything counts as content in some way or another... it just doesn't have a lot to go on for what that content is about.

How to achieve the highest global and local relevance in google?
There was a really good Whiteboard Friday on this topic. http://www.seomoz.org/blog/international-seo-where-to-host-and-how-to-target-whiteboard-friday Rand discusses the tradeoff of the approaches you mention above. Be sure to also read the comments. Some commenters mentioned they had really good results using geotargeting in Google Webmaster Tools.

New consultant looking for advice on setting client expectations
As there tends to be a risk for clients due to the fact that we can't ever guarantee anything, what we do is tell the client that they're not under any contract tying them to us so if we don't deliver they can cancel at any time. That minimises the risk a bit for them. Also, if you're thinking in just terms of rankings with them for the moment you can say that if you don't get x number of keywords (whichever keywords you decide between you are optimal) to page x by date x, and then page y by date y, etc... then they stop payments until you do.

50+ duplicate content pages - Do we remove them all or 301?
I would keep them on the same URLs and explain the dupe content risk to client. Then client can decide to upgrade them himself, have you source new content or allow them to run "as is". I know of a lot of sites that have pages like this that are working well and make nice money.

What's a good CTR for text ads in GMail?
I have about 0.02%-0.06% depending on the client for mail.google.com but it reallly depends on your keywords you are targeting aswell. On the content network don't bother looking at ctr unless you want to test a new ad

One big site or lots of little sites? Which is better for SEO and my business in general?
Keywords in the domain name are not carrying as much value as they once did. (See the Matt Cutts video below). The value you that you would get from having your keyword in the domain of a microniche is pretty small. I think, if you had these two options: bodybuildingfortheelderly.com MyMainSite/bodybuildingfortheelderly ...you could still rank the second one really well. And, any links you build to the second one would help the entire domain. watch?v=rAWFv43qubI
