It seems like your robot.txt file is blocking the index. check your robto file. In addition to that, make sure your non index pages are also added to sitemap.
This could bring up to crawler attention quickly.

I am sure every single ranked keyword also shows the page against ranked page.
The 301 redirect indicates that a web page has been moved from point A to point B, and tells the search engines that this page “moved permanently”. It also tells the search engines that all of the attendant qualities of the original page should be assigned to the new page. HI I would say to fetch your site from Google Search Consule for index. Wait couple of days to get site index. Once, its get indesx Google will start displaying the meta tags and title in both searches.

I just noticed that Moz Prfile is not getting update since couple of days.

It is due to latest Mozscape index on 22nd of June, this has result in drop in DA and PA. I also believe the index include fewer links or url which leads to this drop.it is likely, you've built additional quality/relevant links as you have mentioned, but with the smaller Index these new links, and even previously indexed links, are not being picked up. Therefore, less links are being used to calculate your domain authority score. I would say the drop in your Domain Authority is due to the size of the index.

I would reckon you to use just initial of the language is easy and readable for any visitor regardless if they can read spanish or not. Furthermore, this approcah is always been adopted by most of well known sites.
I think you should refrain using mobile number in your local business listing however, Google dose not penalise you for such things. Google itself encourge business to use local phone number which link with business directly.

In my opinion drop could be due to many reason, Its hard to tell without having look into Search Console and Analytics of your account however based on what we see regularly, majorly what you need to check whether you have received any Google penalty on old site in the past. Is your all valuable pages from old site redirecting to the new pages. Are your users having good and smooth journey.
Are you conducting any off page activity?

Well as Mark rightly said you only use language initials if your site is multi language. Moreover, for English site you never use such initials as it will not make any difference though kind of misleading by giving impression to visitors you may have this site in other languages and they are browsing English version of that. If visitor want to access site in other language then there is no option.
I would urge to you refrain of doing that unless you have multi language site.

Well...you should be target to get backlink to landing page on which you have product or topic itself. Ideally, from that landing page you link some internal pages to share the benefit of that page juice.
