Link building companies irrespective of the cost and location say as "won't use mommy blogs" and will acquire links only from the subject related sites.
But didn't come across any major link building companies accepting penalty clause in their SLA if they breach their promises.
Since hiring link specialists and content writers are difficult for big companies for their immediate need, don't see any option other than going with link builders. Search engines also think twice before penalizing the big sites. Paid search budget will help. Whereas small site owners have high risk.
Own link building team is always recommended.

My advise is not going with any service to select blogs and also to build links.
Most of the providers have thousands of own blogs/domain or some relationship with such sites.
Instead try to engage full time or part time professionals who could follow ethics in selection. Result may take time but there won't be any risk.

301 redirect the non www version to WWW version to consolidate links.
Also check if there are pages like www.example.com/index.html and www.example.com. These pages also need to be taken care of in the same way.

Syndication tag can be used if you are not worried about your pages in Google news.
You may also use "noindex" or "canonical" if you want to play a very safe game. But as you know, your pages won't be indexed.
If you mention the content source at prominent places, you will be O.K.
Example:
In title you may say as "....event by ........."
In the body, you may say as "...thanks to .........."
As long as the overall percentage of duplicate content in your site is in very reasonable level and you link back to content source, you won't find any problem.
Google clarified that content duplication alone will not lead to negative impact.

You said as the old URLs can not be redirected.
Then why don't you try for canonical implementation in the important pages to avoid losing link authority that might have built over the years naturally.
The rest of the URLs can be blocked through GWT using parameters. Since you have new version of site, you may want to concentrate only on the new pages. If the old pages are not redirected, anyway you are going to be benefited.
I would suggest to go with canonical wherever possible and URL parameters only as a last option.
Note: To have canonical, pages need to have more similarities

Not sure if you tried with SEOMOZ tools.

Noindex will take out the pages from the index of search engines. This will impact your traffic if your pages are already ranked.
As long as the category pages have different content, you will be fine. No need to remove them from the index unless you have specific requirement to do so.
For some reason, if you want only the first page to be ranked then go with the pagination hints which will consolidate your link value to the first page and most likely the first page will come up in the search result.
Note: Bing didn't officially endorse this practice and may be on its way.

You need to avoid internal competition while selecting keywords for the internal pages.
It is unavoidable using the same word for the home page to give overall idea about the site to users and search engines.
I would suggest a couple of steps to rank your preferred page for a specific keyword:

checking anchor texts of internal and external links. "Yoga mat" page to get link for the anchor text "yoga mat".

usage of keyword in the URL and position of keyword in the title

checking usage of keywords in the headline, image alt tag and image title
Answers to your questions:
1. Identify the top traffic driving keywords to your site. You may use them in the home page title but don't acquire links for the home page using these keywords which may develop internal competition with your home page and internal pages.
2. Title length is very limited. So use the space appropriately.

I don't have see any site speed issue. Because of the holidays, seeing 30% more traffic for the past few weeks.
To my knowledge, we are not blocking the bot.
