High Competitive Keyword
You're not competitive enough. For very difficult keywords, sometimes it takes whole teams of digital professionals (SEO people, Digital PR people, creatives and devs to execute design concept of 10x content, R&I dept) to secure such keywords. Trying to solo such a thing sounds like madness to me Your best bet is to be honest with yourself. Google the keyword and see what comes up in positions 1, 2 and 3. What do they have that you don't? For example if the keyword was "car insurance" you'd see sites like Money Supermarket, Go Compare and Confused.com at the top. If you were a single car insurance company, you might say "but my page looks so much nicer! It has better design and SEO!" - newsflash, Google isn't looking to rank the pages with the best SEO Sites like Money Supermarket and Confused.com are bound to rank at the top. By using them, a user can compare deals from hundreds or thousands of insurance companies and brokers. Sometimes the technology is the content, and no matter what words you write or what images you use you'll never ever beat it without significant investment If you're struggling away alone, you might have to rethink what keywords you are going for. In 2020 SEO isn't just about links and bits of writing. It's about coming up with a unique product that no one else has, which users would prefer to the current industry norms. Google Mobile site crawl returns poorer results on 100% responsive site
I would advise rendering the page under both circumstances to see what is actually happening. There could be differences in the page's Content, Titles, Headers, Internal links, etc... between the Desktop vs Mobile version even if its a responsive design. Also the Google Mobile tests only evaluate the pages from a technical & mobile friendliness perspective. It doesn't check the content.

Subdomain vs Subdirectory - Specific Case: A big blog in a subdomain
One of the advantages of migrating a blog into a site's structure is outside of the realm of SEO, but can be helpful in making a case to do this. I have migrated several blogs into sections of existing e-commerce sites, as "resource centers". These were not pure migrations, but rather restructuring of the content into pages whcih co-exist with merchandising on the e-commerce site. Here, the advantage is that once a visitor is attracted to a content page on the site, they are more effectively converted into an e-commerce prospect. This is especially true if the blog articles are restructured to include merchandising elements. But even if not, if the only difference is that the visitor is now on a site whose navigation structure includes all of the e-commerce merchandising, they are more likely to convert on such a site. So, the benefit is more about converting customers than attracting visitors. One way I've tested this is to pick a relatively valuable single page, and migrate just that to an on-site page, with a one-to-one redirect. You will have to wait past an initial period where both of your pages may co-exist in the SERPs. But once the old blog page drops out and the new page comes in, then you can test the longer-term impact. Again, the number of visitors may actually be smaller, but you might more than compensate for that by converting more of those visitors.

Due to your website is a - co.uk - somehow it "compensates" the hosting provider issue. If concepts are too similar when grouping keywords what do I do ?
I think there's a lot to be said for this approach, in general for content production. If you yourself can't 'get out there', there's always the option of temporarily hiring the services of someone who has been out that way

Is it a good idea to optimize for keywords that have no search volume if they're ranked?
Check if you have clicks (Search Console) associated with these search queries. Google's search volumes are rounded up and down in 10s, so 0 really just means less than 5. You may be surprised to find that some of these keywords bring impressions or clicks to your site, despite the fact that Google says they have no searches

You say it has been redirected to the new page with a 301, which is only partially accurate. You need to install this Chrome extension which will allow you to inspect redirects and chains: https://chrome.google.com/webstore/detail/redirect-path/aomidfkchockcldhbkggjokdkkebmdll?hl=en. Visit the old URL (http://www.dcacar.com/dulles-limo-service.html) and you will see that it redirects no less than four times (instead of just once). Google probably didn't follow your redirect all the way through. We are redirecting http and non www versions of our website. Should all versions http (non www version and www version) and https (non www version) should just have 1 redirect to the https www version?
