Generally when I link build I try to make it as natural a link profile as possible. I have never found that images have been a great source of links for most websites except real estate. I try to vary my anchor text so its not all 'widget 1', you need to have some variety including just regular www.widget.com links and stuff like 'this site'. About the anchor text being what you want to rank for, the answer is yes. However I usually try to only rank for one main word a page and whatever else happens is a bonus.
