I think the default search engine on Safari would still be Google Search so you would be all right there. And as ios and android cover more than 99% of world wide operating systems (https://www.theverge.com/2017/2/16/14634656/android-ios-market-share-blackberry-2016) that would leave under 1% not covered. For the few Microsoft phones out there, in this 1%, you can off course optimize for bing https://ignitevisibility.com/how-is-bing-seo-different-than-google-seo/

I seem to remember a situation when it was loading by ajax, could that be your case? that could explain you not finding it in the source code and GSC still showing you the tag. I can see all this keywords of being there own topic, sure they use the same main keyword / topic "seo" but they are not the same. A page about "seo history" and "seo strategies" can have substancial different content and cater to a different search intent. If you have good content for all these keywords its a sound strategy to create multiple landing pages for them.
The url reflecting the Page title is a good practice and so is maintaining your URl´s as short as possible.
In your case you have another option that would keep your url reflecting the page title and at the same time keeping it short (though i wouldn´t worry to much about 80 char more on this https://moz.com/community/q/maximum-length-of-the-url-for-seo-75-115 and https://moz.com/blog/should-i-change-my-urls-for-seo

But if you want to choose between your two options i would go for the first https://www.tumbleandhide.com/collections/newton-leather-wallets-card-holders as the latter doesn´t include some important keywords.
I have read those same countless articles but can´t think of any study on it, neither any respectable person in the industry elaborating on it. We pay attention to maintaining consistency in the NAP´s (don´t sell it as a service though) just as good business practice and always had the idea it would be good for SEO as well. Now i am not so sure if there is any impact there.
When i see people mentioning ".. even the slightest variations...will hinder a search engine´s confidence" my hairs standup as i have seen over time that many NAP´s from clients have natural variations, sometimes parts of the address are abbreviated, order of words changed, a small insignificant part of the address omitted, phone numbers with international codes and without, with extensions and without, Names with Ltd and without. Doesn´t make any sense to me that these would already hinder the search engines´s confidence as they are natural (google always claims to like natural).
Very interested to see if someone will come up with a credible source for this

I imagine the address type isn´t a factor for local pack rankings because either one goes to local relevance and i cant see how one would be more relevant over the other. Say i am looking for a hairdresser, google shows a local pack with hairdressers in the area they identified i am searching from why would a business that "service customers only at their location" be more locally relevant than "service customers at my business location And customers location".just a different kind of service. No statistical data to back this up though. Will be interesting to hear other opinions on this.

I´m not so sure today about this technique (though i have used it much in the past) and i do think they could compete. As usually is the case the main keyword for the homepage is more general and more competetive i still think authority strength could be the issue, and increasing relevance wouldn´t solve this. Since it is called search engine optimisation though,nothing keeping you from implementing your idea and see the results.

I would only use repair in the first section of the url /Repair Centre/ and in the last containing the keyword /Mac desktop repairs. I would remove all other repairs mentions inbetween not to overdo it

The url´s can be build several ways. if your issue is the url´s being too long and you want to include the keyword for that page i would go for:
Home / Repair Centre / iPhone repairs
if you want to keep the correct path in your url and keep it shorter and maintain your keyword you could go for:
Home / Mobile Phones / iPhone repairs
There is not one way that is correct, it depend on which conditioner you value most

Is there a correlation or causation between the search popularity of a keyword an the difficulty to rank? I would think the primal reason for dificulty in ranking is a high comercial value of the Keyword that could be because a lot of people search it or because it has high values + margins. So not just the popularity of the search term is key and a keyword could be highly popular but have no comercial value.
e.g. for "tying shoes" (i know not very exciting example) i find 6.600 monthly searches in US and moz ranking diifficulty 50. and for "ty slippers" 390 monthly searches moz ranking difficulty 65, whereas you would excpect the other way around if there was causation.
so i would say there is correlation but no causability. Just my 50 cents
Ok, curious to see some other people opinions. This goes back to intent and is a i see it at the core of SEO and an exercise i like to apply with every keyword analyse.

So first of all is the new site not ranking for any of the main keywords or is the problem that other pages are ranking for them but not the homepage.
in the first case this could be due to a number of reasons but with a new site authority (inbound links) could be a maior issue.
If pages are ranking but just not your homepage that you should thoroughly analyse your onpage content and see why google thinks these pages are a better match and amend the content accordingly.
Your strategy for url´s structure is correct and follow best practices as you said, this wouldn´t be the issue. You could use sa part of the url the main keyword. e.g:
a real estate classified website: category url for family homes in palm springs --> xxxx.com/real-estate/family-homes/palm-springs

Yes you are right, wasn´t aware of this list (learning everyday). It is in fact a ccTLD but google treats it as a gTLD.
So just to clarify you would have a:
xxxx.co targeting the US (and setting up this geotargeting in your GSC)
xxxx.co.uk targeting the Uk (and no need to setup geotargeting in GSC since it already a ccTLD)
If this is the case you wouldn´t have any duplicate content issues. If i misunderstood could you clarify.
