Thank you for the replies! It is a strange plug-in, but the newest version of Magento Enterprise 2.2.3 and all 2.1 and 2.2 aren't any better. It's really messed up how they handle pagination, whomever coded Magento really didn't understand how it's supposed to work and didn't read the Google documentation. The plugin is better but not perfect either. I agree keeping the current structure would be better, I've reached out to the developer to see if they're willing to make a change to the plug-in to keep the original structure. In testing I found it doesn't 301 the old URLs to the new URLs if you switch over so  that's really going to create some issues I feel like

If you've made the suggested changes on Bing and you're having the page break, then I would unfortunately sacrifice Bing. Alternatively I'm sure there are developers out there who could fix this and bypass your issues. You'll just have to weigh up if the "mobile friendly" on bing is worth it.

Thanks for the feedback Martijn. We have decided to  go the JSON-LD as you did. Having both markups on the page caused duplicate products in Google Search Console. We worried that might have negative effects.

Bing is unsteady, I don't recommend taking any action for bing until you have a serious problem with such as no indexing for a week.

Bingo! My theory was correct. It was the extra // on the product pages in the site map. Once they fixed that, it went to indexing the sitemap again.

Absolutely agree with Dana here. Stylizing H1 elements is very common, both classes and ids can be used to achieve this.
