This is a great question. I think maybe you should start ramping up your content so that once your site is ready you can come blasting out with some great content. What I am saying is keep your blog posts as drafts and then launch once the site is ready. Personally, I wouldn't link or share a default WordPress theme.

I'd just leave those links be.  Google knows what contact and privacy policies look like.  Nofollows don't conserve more link juice for other pages that page links to, it just prevents it from passing to the pages you nofollow the link to.
