I managed to snap up a domain last October that was previously being used by people to create online resumes.
On this domain I have created a site that allows businesses to have a short web address that they then use to send their customers to. This short address displays a list of review sites that the customers can choose from to leave a review on the business, ie GMB, Facebook (basically any established reviews site) etc.
The problem I have is that there are so many old links that are pointing to the site referencing the previous resume business and I have three issues:
Many people blindly sign up thinking it’s the resume business because they read it on another site who’s link they followed.
The sites that list my domain are mainly job or resume related sites.
I have the previous business customers still with their personalised links leading back to the site that I currently 404.

Any assistance or advice would be gratefully received.

Just tested it with WordPress Version 4.4.2 & Yoast SEO Version 3.0.7 and all still works fine.

Thanks for the heads up on Session Cam Amelia, not see that one before. I have used a similar service before namely ClickTale but that got a bit pricey.
The setup was easy, I did ask a few question and the support was awesome so first impression are good (starting to sound like I'm affiliated, I'm not just like it when I receive a good service)
Still using changedetection.com myself. I find it easy to setup and fairly reliable.

Have you checked the source code to see it the alt tag is actually there?
ie in firefox/chrome > right click > view page source

If it is there then perhaps you need to wait for Moz to re crawl the site, if not and it's definitely on the image alt in wordpress media then you may need to look at your theme. Establish if the theme utilises the alt element and if not then you may need to add it yourself (via a child theme preferably)

Yes with custom taxonomies. Familiarise yourself with 'Basic diagram on taxonomies and their relationships in Wordpress' over at http://codex.wordpress.org/Taxonomies and also look at Taxonomy Generator here http://generatewp.com/taxonomy/ for a quick way.
There are also plugins such as http://wp-types.com/ that will allow you to do all this without coding.

Sorry for going off on a tangent. Personally I would go with the following (to avoid the 301 completely):
http://www.thewoodgalleries.co.uk/engineered-wood/ as a parent page
http://www.thewoodgalleries.co.uk/engineered-wood/verona as a child page
Then use categories to identify the colours as these are the product variants
Or switch it about to suit yourself, however I think the parent / child / category is the way forward unless you wish to create another taxonomy which is easy for any decent coder.
With custom taxonomies you can create whatever configuration you wish.

Do people know what engineered, prefinished, reclaimed wood is when looking for flooring, is verona only ever available as Dark Engineered Wood? if so then why have such along url structure.

Are you referring to the GA dashboard as this can be customised to show any widgets?
If you are referring to GA in general then the percentages are calculated as a percentage of your overall sessions for the selected time period.

I don't believe you can use GA Exit tracking to determine what domain the user visited next without using a link on your site to track the outbound links. I can not think of any third party tools to complete this tracking.

Personally I would go fully qualified links ie xyz.com/blah.html.
