spot on, no-follow does leak link juice, it just that it is not awarded to the linked-to page.
the only use for it is when you dont vouch for the linked-to page.
No-follow for a limited time did not leak link juice, but this made it hard to get links because everyone was trying to hoard link juice, many still believe no-follow does not leak link juice and are still reluctant to give a follow link.
I dont have any evidecne an old link is any better then a new link simply because it is old. A lot depends on the linking web site, if it is gaining authority and rank then your link will also gain value. But this can be the reverse.
sitemap should show daily, but only for pages you intent to change daily. I got the idea from a Matt Cutts video, that they only honour the sitmap if they find it to be reliable. if you say daily but never update the content, then its not going to work.
I find you dont have to optimize for loca +l keyword so much, as long as local is in the page some where. If you optimize for the keyword you will do well with local also

i believe it is not just where the content was seen first, thinks like up time, loading time and other thinks can decide what page will be seen as the original. Rand did and article on it somewhere.

yes i would use rel=canonical so that the one site is getting ranked, but then your other sites wont rank so well.
you could 301 redirect them all to the same site then do somthing iun the code to present the 5% of changes to the correct users.
but then you have the pproblem of .com not ranking as well as .com.au in Australia.
if you want to keep the .com and the .com.au then you really need to make sites that are different
unless you can afford to maintain 2 vastly diffeernt sites, and can afford 2 SEO campains, i would 301 redirect to the one url. if you have links pointing to both domains then doing a 301 redirect will assign all link juice to one site, you may see a boost in the search engines.

the serch engine will see only one page as original, the others wont be penalized they just wont get any credit for the content
i put rel canonical in all pages so if some oone copies my site the will more than lickly copy the rel=coanonical tag also
Yes it will affect your standing big time. dont do it.
Your second question about the mobile redirect, is not so cut and dry. flash for a start is next to usless if you want to rank in search engines, and sending users and search engines to diffrent pages will get you flaged.
you caoild have a page that asks the user if he wants mobile of web, but sending automaticlly is sending se and users to different pages.
You are not the only one that is frsustated with this, please post url i can only guess without it.

i would use a 301 redirect for this
rel conical tells the search engine where the original content is, it does not pass link juice to the original content. while 301 tells the SE that it is the same page and all link juice will be awarded to the one page.
Lets say you had a domain xyz.com, and you had 3 peole tbhat had their own blogs
tom.xyz.com
dick.xyz.com
harry.xyz.com
wel then search engines may see this as non related sites
but if you had a site clothing.com
and had shirts.clothing.com
and shorts.clothing.com
and pants.clothing.com
then search engines proobably will see them as the same
to help to make sure you are seem as one in the same site, do planty of linking betwen sites, haveing all your images and stayle sheets in teh parent domain will also help search engines see that you are one large site.
try to make the links both ways,

but for SEO, no-follows still lose link juice.
even for a login page i would still no use it, as linking to a login page that links back to your home page can be usefull in link sculpting
photography, photographer? the seqarch engine will make the link between the 2, but you will rankj higher for one than the other. you are correct about changing later, it causes some problems.
its also a lot of keywords for one page, you should try to optimize for one or two keywords per page.
deciding what difficulty level of keyword is really up to you. but me i would go for the top keyword, you will rank well for long tail as a consequence anyhow.
If you had all pages linked from the home page, and all pages linking back to the home page but no other pages, this would rank your home page the highest, but it may not be the best for your users.
I would keep the pages but put a big red job taken accross the page, or if needed change the content completly.
this would give you more pages to play with when link sculpting also
