Track conversions in Google-Play and iTunes
app download tracking is a crazy ride be ready to work for facebook - install their SDK and you are good. with adwords it gets tricky. if you are tracking just installs on Google play no need to do anything - conversion data will come (Two Google products, that is easy) for IOS you are required to install the SDK (see here https://developers.google.com/app-conversion-tracking/) if you are looking to measure inapp events and more I suggest using Google Analytic SDK - start here https://support.google.com/analytics/answer/2568871?hl=en enjoy

Exact match anchor text is negative signal?
It's a balancing act. Google is looking for natural links, not paid or self directed. So percentages are good but you should also randamize your anchor text. If you develop a pattern, eventually the algo can determine that it is un natural. I would identify your most important keywords, maybe 5 and then mix in your brand name and the standard Click Here. Rotate them in a random way and you should be ok. Note your Brand should be the anchor text most often used. I hope this helps and good luck.

Your opinion of link building strategy
I agree with the others, this is NOT an approach I would recommend. I have been doing link building and SEO for 10+ years. Trust me you might see some short term benefits, but this approach is not a long term strategy. Since you said "I know it's hard work" - you seem to be willing to put in the effort to do it right. I would recommend creating 2 or 3 really valuable pieces of content for your website. Then promote that content through bloggers, forums, press releases and all sorts of social media. You might be surprised at the quantity and quality links this may attract. It takes an act of faith, but if the content is good, the links will come. Then create a couple anchor text links from your content to the appropriate pages on your website. Give it a try. You might just get hooked on building link attraction to your website.

Moving subdomain ? How to ?
Yeah, I think that way too. I am using my desired keyword in the sub-domain name, but I don't think it's giving me much credit.
