There is a difference between having a separate mobile site and having a dynamically served site. If your site is actually dynamically served you should be fine to leave your mobile content up until early next year.

If your site has a separate mobile site it will usually appear as a different URL like, "m.yoursite.com" or something similar. There are a few cases where this will be detrimental if it's not set up correctly, but for the most part as long as your site has mobile-friendly content I think you should be fine.

It is also possible that the lack in external back links is a part of the issue as well, if there are a significant amount more pointing at the homepage (if it is also relevant at all to the term that you are referencing).

I would try to sort these posts into categories like "posts that could be useful for SEO", "posts that have backlinks but I do not want to keep", and "posts that are of no use at all". For the ones that could be useful I would try to figure out a way to re-target them to make them more useful (since they are not getting traffic at the moment). For the posts that have backlinks, you can pass their link equity by 301 redirecting them to a similar post if you do not want to keep it around. For posts that don't have backlinks and you don't want to keep, simply adding a noindex tag may be your best best to keep it out of the index and from competing with other pages on your site for rankings.

Obviously, each site cleanup has a unique situation and this may not fit in with yours, I am totally open to discussion on this as there is not a definitive "right" answer.

Big site changes like this can always be tricky. Depending on how often these paginated pages are indexed and how many external links are currently pointing to them (I'd take a look and analyze both of these things before making any concrete decisions). Either of these decisions could be an okay route.

404 ing them is appropriate if the pages arn't indexed in Google, and have no backlinks.  (Be sure to remove all internal links pointing to them as well)

301 redirecting these pages is the correct route if your pages have link equity you want to preserve or the pages are indexed and users could potentially still access them from the SERP.

Since the blog homepage will contain the content these users would potentially be looking to access, I think that the blog homepage is the correct page to redirect to, as it will house the same content as the pagination used to have.

Martin is correct in saying that it is likely that Google will be able to understand what your company does based on links and content outside of your brand's name.  Also, I would suggest focusing your keyword targeting on actual content on the page rather than in your company's name. Like, a title tag on your homepage or page could read " Widgets for work | BetterWidget " (just an example). This would communicate both what your keyword research suggests is the term your users search for as well as your brand.

Also, I like BetterWidget the best as well.

"SEO" and "SEO Tools" would be two separate keywords to target. It is important to build the intent of your body content around the keyword you are targeting. Like, if you were targeting "SEO" your content would likely be an overview of the definition of "SEO". If you were targeting "SEO tools" you would want to focus the content around "SEO tools" specifically.

It's not so much that it matters how many times you use the keywords, but how your content defines it. Having high quality content should be the focus priority.

Yes, you can have the focus keyword of the page be "SEO" and have a secondary keyword be "SEO Tools" and they would be counted as two separate keywords.

There are many reasons that a page could be losing traffic in Oct 2018 outside of AMP. I would make sure that this dip cannot be attributed to one of the recent "medic updates" as well.

To your point, I have also heard a mixed bag of AMP results when switching. How content-heavy would you say your site is?
