I've some questions, so as to understand better your problem:
1) How long its been since the mayor update and redirects?
2) How long have you been with this loss of traffic?
3) Have you checked on Search Console the variation of your searchs? Can you identify any query that seriously drop rank?
4) When updating URLs, did you double check the sitemap.xml and robots.txt? also, did you double check canonicals?
5) Sure that there aren't any 404 error?
6) Did you edit any text?A quick test: Search for any of the term that you've known to be well ranked and check wich domain appears ( in the case of it and de langs)

First of all, many thanks for your time
1: On Feb 14th we did the redirect from www.example.de to www.example.com/de
On Feb 18th we did the redirect from www.example.it to www.example.com/it
On April 19th we did move the site from http to https2: The drop started on the 26th of June (overnight)
3:Yes i checked search console and also all our seo software (Moz, Ahfres, etc) and a lot of keywords have dropped a few places.
4: Yes we double checked the sitemaps, robots and canonicals.
5: Yes we don`t have any 404 errors
6: Yes we did some editing but nothing major. We do add daily new unique content in 6 languages (blogs, products etc)
I searched on some keywords in .de and .it and saw we lost a few places for all keywords

Hi there
When you did these redirects, did you properly map them and follow migration best practices? Failing to do so can lead to a major drop. I would also make sure that you are following international SEO best practices and making sure you are taking advantage of proper indicators for country / language specific websites and content.
I would also follow up on backlinks, citations, and listings, and make sure that they are properly pointing to their new URLs and structure, that way you are getting the full effect of you backlinks. Following the resources above and these backlink strategies should help you get back on track.
