      How do I handle building links to an eCommerce site where the product pages change regularly because product is only available for a certain time frame? Should I focus on building links to the category pages instead?

        Yep that's the best way forward, concentrate on building strong category pages and let the link juice flow down to new pages.  You can also 301 expired pages back to the category page.

          Focus on your category pages for sure.  And outside of that, you should try and dominate comparison shopping engines if it applies to your market.

            Perhaps if you are offering those products as a special deal called " Deal of the Week " then have a page which says " example.com/deal-of-the-week " and get the content on that page and when you update the deal update the content on that page .. so over time that page will have a strong authority

                Yep that's a good idea to.  You can see SEOMoz's ranking factors has an example, each year they keep the same url and update the survey.
