Noindexing categories in Wordpress

Every time I install this plugin for WordPress, I uncheck this option. However, that's the default because most category pages are duplicate content. You can really pull in a lot of traffic to category pages (After all, most theme sidebars and each individual posts link to them, so they have a large quantity of links) but you have to make sure you solve the duplicate content issue.
Category page styles can be overwritten. You create a new file in your theme root according to the naming convention found on WordPress.org:
http://codex.wordpress.org/Category_Templates
You can now add images, fresh text, and anything you want to that specific category page. Now it has unique content and can serves as good link bait. Honestly, I don't know why more people don't do this.

Do you think just adding a couple paragraphs and some pictures will be enough to ward off the duplicate content monsters? Considering much of the content will be the posts found elsewhere on the blog?

Yes. Also consider filling out an excerpt for each post, and showing the excerpts instead of the preview of the article for category pages. That way all the content is completely unique.
It's more work but it's worth it.
