Structured Data + Meta Descriptions
JStrong, Just to make sure we're all on the same page: Although Google uses the phrase "Structured Data..." I don't think they mean it in the same was as you would use, for example, Schema markup in the code. The example there is simply a meta description, which you can use for whatever purpose you like. It could be worth testing the Click-Through-Rate on meta descriptions like that (a metric you can see in Google Webmaster Tools) to decide if you want to use it, though for my money I'd bet on a description with a clear value proposition, offer, call to action, emotion, etc... that will also have their keywords bolded if they appear in the description. If you do test it out please share what the effect on CTR in the SERPs was from GWT. Just because I'm curious.

Sitemap include all site links or just ones we want indexed?
Hi again JS, I think it's great that you continue to evaluate your platform from all perspectives and evaluate its strengths/weaknesses. Many times, a platform can do a lot of the basics well, but fall short on the details that differentiate us from our competition. For example, opencart may do the basic SEO requirements well, but not include ecommerce microdata (schema.org) which have a high impact on our search listings. You can do a lot of harm/good with the robots.txt file - like deindex entire website (probably not a good thing) or block certain directories (your /product issue). I would gain some deeper knowledge about what you can do with the robots.txt file and how you need it to perform for your business.

Bot or Virus Creating Bad Links?
Appreciate the different responses. Sounds like not much to do but keep an eye on it and see where it goes. May have to disavow a bunch of links, but if that is the worst of it, then not too bad. Thanks!

Directory Quality for Citation Building
No problem. A big give away is normally the URL, for instance anything with numbers in is a big red flag. I have just updated our profile as I noticed we hadn't included our websites. Hope you find some useful citations on the list! J

Loss of 85-90% of organic traffic within the last 2 weeks.
Yes, I got the exact same issue on September 17th, but the drop in traffic was around 10% from Google only. It is really bad for us because usually from mid September traffic is picking up toward the Holiday season. I am trying to understand what caused that drop in traffic. Blocking out specific URLs with robots.txt
Do not play with Robots as it may block out series of pages and folders out of index Correct command as stated by Lesley is /cats/ . Refer official documentation https://developers.google.com/webmasters/control-crawl-index/docs/robots_txt
