Can I leave off HTTP/HTTPS in a canonical tag?
Very good to hear, thanks Shawn! The goal is to use absolute canonicals, but for a period of time, we may have to use protocol relative. The redirects in place should avoid any duplicate content issues, which seems to be the big landmine.

Geo content and where Googlebot crawls from.
Google is location-agnostic, though will act like it cares about location depending on the location of the search. If it pulled the wrong thumbnail for you, it got there via a link (internal or external) and felt that is an appropriate result. What you do now depends on your goal (change the thumbnail for example). It's good that you appear with a geo-targeted piece of content. This means you're responding to local searches. Google will show different SERP results for every person and location, so there isn't much value/concern over how they see your site. They see it from "all" locations.

Toby, thanks for the suggestion! I believe that this will help accomplish what we need. My Dev gave the "oh S" I should've thought of that response.

From that screenshot, looks like you have a G+ page associated with your website that lists all of that info. Your best bet would be to disassociate your URL from this page https://plus.google.com/102542416695217785100/

How do SE's see abbreviated queries.
They are looked at as spaces just like hyphens. As far as I remember, Matt Cutts says the only symbols that count as a character are underscores. Everything else is a space.

Vanity URL's and http codes
Like I said in the last paragraph, if this is temporary, 302 redirect the original destination URL to the new destination URL as well as the redirecting URL to the new destination. If these changes are permanent, make them 301 instead of 302 redirects.
