Youtube Adwords click/visit discrepancy
as far as -i know a click on a video ad doesn't always resolve to a visit to your website. The first click will get the user to see the video and you're paying for it. If you want to be sure that you're tracking all the visit have a look at your log files or put a 1x1 pixel which activates when you page is loaded. Then you can check how many times that pixel has been loaded and how many visits you've received.

Hey Graeme I am unsure of any specific guidelines with regards to HTML special characters but I would tend to keep my page titles to the agreed and safe characters. In this instance, the page title is totally fine but ascii has been abused in page titles in years gone by to create more catchy looking SERP listings. (¯'·.¸(¯'·.¸Free X !!! Click Here !!!¸.·'´¯)¸.·'´¯) You may find a variety of things happen and your titles get rewritten. One other point or perspective - you mention that Googlebot sees the ascii code but a human sees the bullet character. Well, where? How does your SERP listing look? If the page title in the search engine results looks like this: My Product • Category | Site Name Then, I would say that is a pretty good reason to do away with the special characters. Do nofollow links affect link profile?
I can't agree more with William Lau. When I build links I always do it naturally. If I find a website that is the perfect fit for my campaign then I am going to attempt to get the link regardless of whether it is follow or no-follow. This is natural link building.

Embed hosted videos or Youtube videos on site
If you just want the videos watched - Host the YouTube versions, but bear in mind that you'll be sacrificing rankings to your own site as a consequence. Additionally consider that View Counts don't actually effective YouTube video's ranking position much. More important to improve visibility on YouTube.com is the user engagement (how many peopel watch the video through to the end and then thumb/comment/share it).

How much impact do Youtube transcripts have?
Transcriptions definitely have impact on your rankings in Youtube. The purpose of the search is to deliver the closest options to the viewer as possible so if they find a match in the actual content of the video, it will be ranked better than a video that doesn't have the content matched. The transcribing function offered by Youtube is not perfect - it does a poor enough job at the moment that transcribing them yourself and uploading the file is worth the time.

Updating Youtube Videos
They're new, improved versions of old videos. I looked back, my original post was ambiguous. So a typical video would be on the same topic as the old video, but with refined presentation, different visuals, and in HD. So brand new, but covering exactly the same topic. Is your answer the same?
