SSL for the entire site?
You'll need to be running Apache with mod_ssl or Nginx with http_ssl_module enabled (And SPDY if you want), and you'll need to have 443 port enabled. Of course, you'll need to properly configure your VirtualHost(s) with a valid SSL certificate installed. Then you can simply change your "Wordpress Address" and "Site Address" in your Wordpress "Settings"-->"General" from http:// to https://. http://make.wordpress.org/support/user-manual/web-publishing/https-for-wordpress/ Hope that helps!

Relaunch - How to find URL's to keep
Hi Bastian, Finding urls to keep is simple. Just login to your Google Analytics and Check the tab "Content". You will find all the urls and their pageviews. Sort down the necessary urls. Recommended: It is recommended to add 301 redirects from all the old urls to new urls. Also add a custom 404 page after the launch. Login to webmaster tools to find more errors. Regards, Infant Raj

How to handle outdated products/pages?
Hello Bastian, With regard to outdated products the best solution I have found is to 301 redirect the old product URL to the closest category page. I prefer this to redirecting to another product page because once the new product is outdated you'll be going through multiple redirects. Look into updating the old blog posts and making them more relevant for readers today. If you are unable to do that I would just leave them where they are. As they get outdated they should drop in the rankings anyway. Or you could 301 redirect them to a more recent post.
