From my knowledge I can safely say the age of the domain is from the day your domain is registered.

The age of a domain does not equal the age of a site necessarily. A domain can be purchased and sit empty for years. Of course, Google is aware of when a site is first indexed.
To be clear, it has been demonstrated a domain or website's age has no direct value for SEO. Indirectly, there is the correlation that the longer a site or domain has been active, the longer the opportunity for link building.
If you buy a 10 year old domain with no links to it, you will not have any more value then a brand new domain from a SEO ranking perspective.

I would second Ryan's point. Its what you put in. Many people have domains with no content so it is the activity and quality of content that matters on the domain.
