I was wondering if it would it be a valid "link building' strategy to pay / work out a deal with youtube video owners, to link to our company website in the decription of a certain video they posted? ( For popular video's that are relevant to our business. )
Anyone have any thoughts on this?
Thanks in advance!

If you would see this links as generators of traffic or to increase awareness it could be a valid strategy (check this article:https://moz.com/blog/the-hidden-power-of-nofollow-links )- however if you need these links from an "pure" SEO perspective to increase your page rank you can forget about it - the links on Youtube are nofollow.
(apart from that - Google doesn't really approve paid links...)

Unnatural linking -- including paying for links -- is against Google's guidelines and can get you penalized.
Additionally, the vast majority of YouTube traffic never leaves YouTube. YouTube is a great channel for branding, but not a great channel for getting people back to your website.
