Videos in Google organic search are essentially ranked in the same way as Pages - Google don't actually rank videos, but rather rank videos with pages on. Relevancy, inbound links and the quality of the pages are still the major factors which effect ranking.

On YouTube.com, ranking is determined primarily with user signals - do people watch through the videos to the end, does the video get a lot of views etc. Off-page factors such as embeds, views through embeds, links etc etc also count.
