Why are we not ranking for certain keywords?

Maybe its beacuse there is nothing on the page about toy soldiers? why would google want to rank a bunch of links?
Open site explorer also has no data for your domain, you should get some more links and give it a bit of time

You should definitely not rank for Toy Soldiers, with that page, unless you are the only site with anything about them.
You should read the SEOMoz docs about what you need to do, before worrying about the reason you aren't ranking.
You have what anyone would call "thin content" - you are not being penalizes, you just don't have anything useful.
You could probably rank quite well for that term.
Check out who is ranking for those terms and see how good a job they did of it.
From what I have seen, it will be relatively easy, but your current page needs work.

Yep, fair points. I was assuming that the ranking would be performed on the full site and come through on this page due to the URL. I'll do a bit more research! Thanks for the help!

Every page stands on its own merits, for ranking.
- except that external factors help.
= the power of the links that point to it
= the text in the link (at least until google decides to change that)
So your site as a whole can help a little, depending on many things, including the proximity to your powerful pages and what the links on those pages say about the toy soldiers page. If the text of the link says "check out our stuff" and links to the toy soldiers page, that definitely won't help.
But nothing (much) will help if the page isn't solidly about the keyword.
