The competition would be very low 6.240 with the term κατασκευή ιστοσελίδων in the url
http://goo.gl/vpec9 against 5.590.000 for the term κατασκευή ιστοσελίδων.
So you would have the advantage for that keyword, but I think that usage as a search term would be low too.
But interesting question I look forward to some more answers.

Hi George,
first of all, let me tell you I am not an expert in Greek SEO, hence I kindly ask you to not consider my answer as the correct one, but simply a suggestion.
From what I've seen of the site and from what you were stating, you are clearly targeting the Greek speaking (and writing) market.
Therefore, from an user point of view, it would be more logical to have also the URL written with Greek characters, as the Latin version of them surely look unfamiliar and may could also look weird.
From an SEO point of view, then, it seems also better - IMHO - to have the URLs in Greek, because if not would mean that we are assuming Google can understand that the Latin transliteration of a Greek word is Greek, which is not so certain.
Finally, about what keyword in your specific example, Greek doesn't differ from every other language: use the Google Keyword Tool to make your analysis about use, volume of traffic and competition. But also, and this is something I do, check out also what term/phrase people really use in real life doing monitoring how people in your target talk in the Social Media.

if i put greek urls instead of greeklish, then i would have errors in the on page optizize tool for canonical urls.

Mmm, yes, because the tool is not thought for not Latin alphabets. But that is a problem of the tool not a general problem that also Google may have.
