Can I maximize beyond my targeted keyword?(and how)

You are correct to think you are missing the opportunity. Here's why:
If it takes x amount of time to optimize for one exact match keyword and that's all your site has, you will have to have x times x work for all of those sites. Direct proportion.
If you build out a deeper site you will gain cumulative value from the work. As individual pages become ranked, that boosts the rank of the whole site over time. It lifts other pages up naturally.
Also, the more you have other similar review content, the more likely people will, over time, explore more info on your site, and some of those will come back to the site as a trusted source.
Then as you promote any one review, via links or social media, the whole site also benefits from that promotion and off-site confirmation.
And it ensures your ability to manage separate sites doesn't completely get out of hand.
Adding in the informational content in its own section of the site (or underneath individual review pages, will just further boost everything as well if the information is tightly related to the umbrella topical focus.

First, I would suggest that you limit the full posts to their individual details pages, and only have the title and opening text of them on the home page - this prevents duplicate content conflicts.
I would then assign things to categories. Have a category for the reviews and a category for info. That properly groups content for further optimization value.
Include whatever you think makes sense from a combination of SEO and user readability. If you think adding the brand into the title along with the keyword targeted makes sense, then yes, I would include that. Just don't let the titles become so long that they look silly (that's a sure sign you will run into over-optimization problems.

keyword selection is an art form. Sometimes it's an exact match and sometimes it can be an alternate if that's a partial match (and in the content you include the exact match). Quality content with a couple variations in the content will ultimately lead to an exponential growth in long tail site visits where Google determines the long tail via your few additional variations and also all the other words around them.
