Prior to my accepting a project, the client decided to change the name of their company and purchased a new domain name to match. They hired a designer to build their new company site which has now been up and running for a little under 12 months.

Up to this point they have done a good job of slowly redirecting small handfuls of linking domains from the old site to the new.  They want to make one last push and point the remaining 250 linking domains from their old site to their new site.

Will redirecting 250 linking domains to a new website from an old website freak Google out? If so, how many domains should be redirected at one time?

My main concern is not wanting to upset Google and see the floor fall out on current keyword rankings, domain authority and page rank, etc.

Definitely not. Sites move every day and redirects are the best means to handle those URL changes.

There is no SEO reason not to immediately 301 an entire site after you have decided to move and the new site is properly set up. Sites involving hundreds of thousands and even millions of pages can be moved and Google will properly handle the change.

While we are on this question, what about moving links from one site to another that is not a new site.

I have done just that recently, where I changed my sig on microsoft groups, causing hundreds of fourm post to now point to anouther site, plus many other pages i had the ability to change. But still have the old site up, i wonder how they see that? the same of not?

A forum signature link is probably the lowest value link possible. With that said, as Google crawls each forum page they will recognize your signature link has been changed on that page and update their data accordingly. It is a direct link, rather then a redirect, but the concept is otherwise similar.
