Hi,
Perform these steps:
- Login into wordpress admin area
- click on edit posts
- Select the posts for which you want to add the category
- click on edit from action at top of the page..it will allow to edit mass settings
- add the category for the posts which you have selected
- save the changes.

Uhm..
First attachment show absolutely normal structure of posts. And it says that all your posts are "uncategorized". Therefore there is a standard way to add categories. Create normal category, the way you'd normally create category, then proceed with steps I wrote above.
I'm not sure what you mean by "not an ordinary post". And there is no way to really understand how it's all built and works without looking into code and backend of template created.
P.S. Did you work with wordpress before?

That is your post. It has category, tags etc.
Your people webpages - something different. It seems to be a page or some kinda different template based whatever it is. Check your templates and what's connected to them.

You'd have to look into template for those OTHER posts. It seems that this has been done - those OTHER posts type were copied templates from original template, messed around and styled to however they need to look. So, every type of OTHER posts (crew, job, location etc) is separate template with categories disabled or removed whatsoever. So, what you'll have to do is to try to "restore" these templates to the state, when they have categories and other standard functionality.

I think your best bet here is to find someone who can help you directly. It can be very hard to diagnose an issue like this in a Q&A situation with only screenshots to go off of. It's a custom theme, as you said, so who knows what the developer did to it!
