Dealing with the Mobile update at a complex site with solutions other than suggested by Google

Not sure if I understand 100% how the redirects will be implemented. Probably the easiest way to find out if it's going to work is to create a small test environment where you implement the solution (both scenario's) and then check with the Google Mobile Friendly test if Google sees the page as Mobile Friendly or not. If not, you'll have to find another solution.

Along with the Google Mobile Friendly Test that Dirk suggested above (which I HIGHLY suggest using during this time), I would also take a look at Google's Mobile SEO Guide, particularly in the Signal Your Configuration section. From the sounds of things, you might want to look at the Separate URLs section. It's super easy to read and provides examples.
There is a LOT of helpful information in there that can help you prepare your website and take advantage of best practices.
