I see your point,
So redirecting the juicest pages from topgift to the relevant pages on dadshop?
But I wonder if it would be more beneficial to just do a full 301 redirect

You might have more trouble ranking http://www.topgifts.com.au/ because it seem to have some nice keyword stuffing in the footer... I also see some other stuff that might look suspicious to search engines on both websites.
If you should do a redirection? You shouldn't only rely on SEO to answer this question but also on your business and branding goals.
With two website, you have twice the chance to rank well, but you have twice the job to do for maintaining both website. That's up to you to chose what way you want to chose.

If you're intent on mergign the two websites e.g. branding, market positiona re not an issue) then you should do a full 301 redirect on the site. I would also make sure that pages which are receiving external links are mapped one to one to a relevent page on the main site. In an ideal world I think you would map every page on a one to one basis with relevent content, but in the real world this is usually too big of a challenge.

Your right its a huge challenge but 301's for pages with external links seems a bit more realistic to do
