Welcome to the community! I agree with ApOG about the beginners guide to get started. While you can jump right in, at best you'll get pretty lost and at worst, you could really hurt your client's site.
Other tips:
1. I'd go through the q/a forum and write down terminology that you are unfamiliar with. Sometimes this industry feels like a foreign language to me, so it's always helped me to try to at least get the definition of what people are saying, even if I can't follow passed that point.
2. I would focus on keyword analysis to start. What are you ranking for now? What do you want to rank for? Where are you in relation to your competitors? If you're familiar with google analytics and webmaster tools, this can help. If not, get familiar with them.
3. If you don't focus on keyword research, try to pick one aspect of the site that will net you the greatest return and then ask for help with that project.
4. Always remember, rankings don't matter; conversions do.

Another simple-ish trick you can do is to create a campaign in Moz. The campaign will run an audit of your site and take a look at all of your webpages, checking all of your tags, links, etc and it will actually give suggestions of what to do & where to start. The Moz campaign will show you which keywords are sending traffic to your website and which pages should be optimized from there.
Unfortunately, there is no quick fix for SEO, and depending on how much needs to be done, it might be in your best interest to contact an outside professional for a consultation!
